Gino is a huge mushroom fan: “I love cooking with mushrooms. They’re so versatile and their distinct meaty texture makes them a satisfying recipe ingredient for meat eaters and vegetarians alike. Mushrooms are a very rustic ingredient and best cooked from fresh.
